Easy Homemade Rosemary Sweet Potato Fries in under 15 minutes.

Ever tried to make homemade sweet potato fries and they end up mushy?  I found a better trick to make them crispy and yet soft on the inside!  

Easy Homemade Rosemary Sweet Potato Fries in under 15 minutes!



What you need:
Depends on many people you plan to feed.  ~1 medium sweet potato for 2 persons ~chopped fresh rosemary, about 1 TBS ~1/2 TBS of melted extra virgin coconut oil or extra virgin olive oil (I used coconut oil) ~1/4 tsp of pink or sea salt ~dashes of black pepper ~optional: dash of cayenne pepper for extra kick

Direction:
The preparation takes about 3-5 minutes and the cooking takes about 8-10 minutes.
Turn on the oven at Broil High.  The rack should not be at the center line .  Move the rack up 1or 2 lines above the center line. Line the baking sheet with parchment paper or foil paper.  Cut the medium sweet potato into half.  Then slice these into fries size (see the pictures below) Add melted coconut oil, sea salt, pepper, cayenne pepper, and rosemary to the raw sweet potato fries and coat well.  Make sure they are laid down flatly on the baking sheet.  Place it in the oven and let it broil for about 5 minutes.  Then turn fries over or toss them around and broil again for another 3-5 minutes or until golden and crispy.   Keep an eye out on these while they broil.  They will burn quickly if you do not pay attention to these.
